Breakfast Bagel Sandwich

Breakfast Bagel Sandwich!

For this recipe you will need:

  • 3 Eggs
  • 1 Bagel (plain or onion)
  • 2-6 pieces of Bacon
  • Cheese
  • Cream Cheese
  • Avocado
  • Onion
  • Garlic
  • Spinach
  • Mushrooms
  • Butter

Step 1: Chop Garlic, Onions, Mushrooms, and Spinach

Step 2: Over medium-high heat, sauté the chopped garlic, onion, and mushrooms in butter and/or Olive Oil.

Step 3: Once the onions are translucent, add the chopped spinach and cook for about 3 minutes.

Step 4: Remove the vegetables and place them in a glass bowl. Cover with foil.

Step 5: Cook Bacon over medium heat. Turn frequently. Be Careful not to burn the Bacon! Once finished, remove Bacon from the pan and place on a plate lined with paper towels.

Step 6: Cook the eggs to desired “doneness.” I prefer my egg yolks to be “over-medium,” slightly runny. If you prefer your egg yolks to be fully cooked you can break the yolk with your spatula.

Step 7: Once you flip the eggs, take the pan off the heat and allow the eggs to sit for 30 seconds. The eggs will continue to cook in the hot pan.

Step 8: After 30 seconds, stack the eggs on top of each other with a slice of cheese in between each egg.

Step 9: Toast Bagel.

Step 10: Assemble your sandwich: Smear Cream Cheese on the Bagel; add ½ an Avocado, Bacon, Eggs and cheese, Onions, Garlic, Mushrooms, Spinach, and hot sauce (my favorite is Cholula)

Serve with a hot cup of coffee for a STRONG pre-workout OR post-workout meal.
